It's been a busy day but I stopped by Absolutely Fresh on the way home today and we had salmon fillets.
I sauteed zucchini, red and yellow peppers and mushrooms with a little olive oil in a skillet. Hannah and Luke chopped all the veggies:)
I broiled the salmon with lemon, sea salt and pepper.
We had pearl couscous with raisins, cranberries and toasted pinenuts.
Also, chopped cucumbers, tomatoes, capers with balsamic vinegar for a side salad.
Dessert was fresh berries.
