Healthy Peach Crumble

I made this recipe up today and everyone enjoyed....ok, it does not taste as good as a real peach cobbler but....if you are craving a treat it might hit the spot.

I did not measure everything exactly so here is the best I can remember.

First I toasted pecans in a skillet.  I used about 1/2 cup....toward the end I added a little maple syrup.

1 1/2 cups of oats
1/4 cup oat flour (you could also use Whole Wheat)
2 to 3 tsp of olive oil
about 5 tsp or more water
1 tsp xylitol (optional)
2 tsp or more of maple syrup

Mix together and add toasted nuts.

Slice 3 to 4 peaches and cook in a skillet on stove.  Once they are hot and fairly cooked pour them into a 9 inch baking dish.  Then top with the mixture of oats. Bake on 350 until brown...it took about 15 minutes or less.

You can play around with this recipe and add cinnamon or different fruit. 

This is a totally healthy dessert and you can indulge without feeling guilty!
